安徽小伙“画”出十二层反推郁金香 成为“星巴克最强咖啡师”Anhui guy 'draws' twelve layers and pushes tulips to become' Starbucks' strongest barista '
大皖新闻讯 9月8日，第十一届星巴克中国咖啡师大赛迎来总决赛巅峰时刻。来自合肥的侯懿林夺下“星巴克中国咖啡公使”头衔，来自南京的陆杨则荣膺“星巴克中国臻选咖啡公使”称号。两位新晋公使接过了象征星巴克中国咖啡师至高水准与荣誉的棕围裙。大皖新闻记者了解到，侯懿林是安徽亳州涡阳人，拉花技艺高超，能用大奶缸拉出一朵十二层反推郁金香，被伙伴誉为“大奶缸非遗继承人”。
从三层拉花到十二层拉花 他用了四年
咖啡拉花，就是将打发出细腻奶泡的热牛奶，以一种精准可控的方式倒入浓缩咖啡中，利用奶泡与咖啡油脂（Crema）的颜色对比，在液面“画”出图案的艺术。
侯懿林（英文名Jerry）在星巴克有一个伙伴授予的头衔：“大奶缸非遗继承人”。客人第一次听到这个称号往往会笑，但看到他用大奶缸拉出一朵十二层反推郁金香时，笑容往往会变成惊叹。
奶缸口径大，要做出精细图案并不容易。但侯懿林觉得，伙伴们的拉花难度不该被器具限制。他一直在社交媒体上分享拉花视频，从带领徒弟用“浓系列”的小绿杯拉花，再到今年的玫瑰拉花挑战，从三层到六层，再到双树叶摇曳玫瑰、十二层玫瑰，全部用大奶缸完成。“三和十二之间也就差了个九，”他笑着说，“但这九层，我花了四年。”
四年前，侯懿林还是上海的一名职业游戏代练，每天依靠美式咖啡提神。直到姥姥说了一句“毕业后不希望他离家太远”，他离开了上海，回到安徽合肥，走进了星巴克。入职第三个月，店经理把他推上了比赛舞台。那一年他连拉花都还不熟练，店经理在他面前轻松地拉出一片树叶，那一刻，那片树叶深深地吸引了他。
侯懿林开始钻研咖啡文化，尤其是拉花艺术，并逐渐成为高手。2023年，侯懿林成为大区经典拿铁艺术冠军（大奶缸）。但真正让他对星巴克的理解发生质变的，是苏门答腊的原产地之旅，他在异国他乡亲手种下一棵咖啡树。虽然语言不通，但他感觉到两个国家之间的情感纽带，因为咖啡而连接在了一起。那一刻他意识到，道德采购不是书本上抽象的概念，而是实实在在地在远方默默耕耘。
将回到门店继续推广咖啡文化
星巴克中国咖啡师大赛，是全国七万多名咖啡师竞技的巅峰舞台。本届大赛历经区组赛、地区赛、区域赛及大区赛四个阶段，覆盖全国数千家门店，最终选拔出11位选手进入全国总决赛。参赛者不仅需要具备过硬的咖啡师专业技能，还要拥有出众的表达能力，以及对于人文联结的热情。
本届大赛首次分为核心组与臻选组两个组别。不同组别选手所使用的咖啡豆、咖啡机、冲煮器具等，与核心门店和臻选门店的实际运营情况高度一致，以考察参赛者在日常运营当中积累的真实实力。同时，本届赛事设置了咖啡盲品、拿铁艺术、冲煮与故事、高峰挑战和创意特调五大项目，从专业技能、感官能力、创新能力以及顾客沟通能力等多个维度进行综合考察。
最终决出的两位全国公使，分别代表星巴克核心门店与星巴克臻选门店的至高服务水准。“我们会继续在门店推广咖啡文化，为顾客带来更好的咖啡体验。”侯懿林说。

He can pull out a twelve layer tulip with a big milk vat to push back the tulip, and is praised by his partners as the "inheritor of intangible cultural heritage of the big milk vat".
He spent four years pulling flowers from the third floor to the twelfth floor
Coffee latte art is the art of pouring hot milk that has been finely frothed into concentrated coffee in a precise and controllable manner, and using the color contrast between the milk froth and coffee crema to "draw" patterns on the liquid surface.
Hou Yilin (English name Jerry) has a partner at Starbucks who grants him the title of "Inheritor of the Intangible Cultural Heritage of the Big Milk Jar". Guests often laugh when they hear this title for the first time, but when they see him pulling out a twelve layered tulip from a large milk tank, their smile often turns into astonishment.
The milk tank has a large diameter, making it difficult to create intricate patterns. But Hou Yilin believes that the difficulty of his companions' flower pulling should not be limited by equipment. He has been sharing flower pulling videos on social media, from leading his apprentices to use the "Thick Series" small green cup flower pulling, to this year's Rose Flower Pulling Challenge, from the third to the sixth layer, to the Double Tree Leaf Swinging Rose and Twelve Layer Rose, all completed in a large milk tank. There's only a difference of nine between three and twelve, "he said with a smile," but I spent four years on these nine levels
Four years ago, Hou Yilin was still a professional game trainer in Shanghai, relying on American coffee to stay alert every day. Until his grandmother said, 'I don't want him to be too far away from home after graduation,' he left Shanghai and returned to Hefei, Anhui, entering Starbucks. In his third month of employment, the store manager pushed him onto the competition stage. That year, he was not even skilled at pulling flowers. The store manager easily pulled out a leaf in front of him, and at that moment, the leaf deeply attracted him.
Hou Yilin began to delve into coffee culture, especially latte art, and gradually became a master. In 2023, Hou Yilin became the regional classic latte art champion (large milk vat). But what truly changed his understanding of Starbucks was his journey to Sumatra, where he personally planted a coffee tree in a foreign land. Although they didn't speak the same language, he felt the emotional bond between the two countries connected by coffee. At that moment, he realized that moral procurement was not an abstract concept in books, but a tangible and silent cultivation in the distance.
Will return to the store to continue promoting coffee culture
The Starbucks China Barista Competition is the pinnacle stage for over 70000 baristas nationwide to compete. This competition has gone through four stages: regional group competition, regional competition, regional competition, and regional competition, covering thousands of stores across the country. Finally, 11 contestants were selected to enter the national finals. Contestants not only need to possess strong professional skills as baristas, but also outstanding communication abilities and a passion for humanistic connections.
This competition is divided into two categories for the first time: the core group and the selection group. The coffee beans, coffee machines, brewing equipment, etc. used by different groups of contestants are highly consistent with the actual operation of core stores and premium stores, in order to examine the real strength accumulated by contestants in daily operations. At the same time, this competition has set up five major projects: blind coffee, latte art, brewing and storytelling, peak challenges, and creative special notes, which comprehensively evaluate professional skills, sensory abilities, innovation abilities, and customer communication abilities from multiple dimensions.
The two final national ambassadors represent the highest service standards of Starbucks core stores and Starbucks premium stores, respectively. We will continue to promote coffee culture in our stores and provide customers with a better coffee experience, "said Hou Yilin.
