日前,在2026世界咖啡师大赛中国区总决赛上,来自贵阳云岩的胡豆咖啡再度凭实力惊艳全场,成功拿下全国第三名的优异成绩。延续去年的亮眼战绩,连续两年跻身全国前三,这一次,胡豆咖啡主理人梁嘉宸带着专属贵州的风味与创意初心,交出了一份更从容、更出彩的答卷。

据介绍,本次赛事的参赛创意作品最大的亮点就是扎根贵州本土风味,把地道黔味食材巧妙融入精品咖啡,打破大众对创意咖啡的固有认知,解锁全新味蕾碰撞体验。
“我们团队精心甄选两大贵州特色食材,让山野烟火与咖啡醇香完美邂逅。”梁嘉宸介绍说,第一款秘密食材是百香果油,这是本地酸汤的灵魂配料,能够柔和酸汁、丰富口感,让咖啡的酸甜层次更温润、更协调,口感细腻又清爽;第二款特色食材是苏麻子,这是妥妥的贵阳本土“宝藏食材”,店里经典产品中就一直沿用这款食材,早已成为品牌的风味印记。

谈及为何执着于选用贵州本土食材打造参赛作品,梁嘉宸分享了本次参赛的核心主题——尊重风味的多样性,表达独属于自我的味觉感受。他说:“往年备赛过程中,团队的作品常被评价‘酸度偏高、风味质感强烈’,大家会想着调整去迎合大众口味。但今年,我们认为这浓烈独特的酸感,恰恰是贵州风味最鲜明的特质与品牌印记。”
咖啡不仅是单一的醇香,更是地域文化的载体。连续两年摘得全国季军,同样的名次,却藏着截然不同的心境变化,格外让人动容。

“去年拿下全国第三时,团队内心满是焦虑,满心执着于‘冲刺更好成绩、全力求胜’;而今年再度登顶前三,大家多了一份从容与笃定。”梁嘉宸说,今年,团队全身心投入作品创作,尽情表达专属品牌与贵州的风味故事。也正是这份真诚与纯粹,收获了赛场满满的认可。不少评委与观众品尝作品后纷纷点赞,对融入苏麻子的创新咖啡风味尤为惊艳。对专业评委而言,苏麻子的风味十分新颖独特,这样别出心裁的本土化创意,打破了常规创意咖啡的创作思路,让人眼前一亮。
这份全国第三的荣誉,是认可,更是前行的底气。历经赛事的打磨与沉淀,胡豆咖啡已然摸索出专属自己的创作赛道,在本土风味创意咖啡的研发上愈发成熟自信。接下来,胡豆咖啡将继续深耕本土创意咖啡赛道,持续积累赛事经验、打磨饮品品质。

It is reported that the biggest highlight of the creative works participating in this competition is rooted in the local flavor of Guizhou, cleverly integrating authentic Guizhou ingredients into boutique coffee, breaking the public's inherent perception of creative coffee, and unlocking a new taste buds collision experience.
Our team carefully selects two Guizhou specialty ingredients, allowing the perfect encounter between mountain fireworks and the rich aroma of coffee. "Liang Jiachen introduced that the first secret ingredient is passion fruit oil, which is the soul ingredient of local sour soup. It can soften the sour juice, enrich the taste, make the sweet and sour layers of coffee warmer and more coordinated, and have a delicate and refreshing taste; The second specialty ingredient is Su Mazi, which is a well-known local "treasure ingredient" in Guiyang. This ingredient has been used in the classic products of the store and has long become the brand's flavor imprint.
When asked why he persisted in using local ingredients from Guizhou to create his entries, Liang Jiachen shared the core theme of this competition - respecting the diversity of flavors and expressing his unique taste experience. He said, "In previous years, during the preparation process, the team's works were often praised for their high acidity and strong flavor texture, and people would think of adjusting them to cater to the public's taste. But this year, we believe that this strong and unique acidity is precisely the most distinctive characteristic and brand imprint of Guizhou flavor
Coffee is not only a single aroma, but also a carrier of regional culture. Winning the national third place for two consecutive years, with the same ranking, there is a completely different change in mindset, which is particularly touching.
Last year, when we won the third place in the country, the team was filled with anxiety and was determined to 'strive for better results and win with all their might'. However, this year, when we once again reached the top three, everyone felt more calm and confident. "Liang Jiachen said that this year, the team devoted themselves wholeheartedly to creating works, fully expressing their exclusive brand and Guizhou's flavor story. It is precisely this sincerity and purity that have earned full recognition on the field. Many judges and viewers praised the work after tasting it, and were particularly amazed by the innovative coffee flavor infused with Su Mazi. For professional judges, the flavor of Su Mazi is very novel and unique. This innovative localization idea breaks the conventional creative coffee creation ideas and is eye-catching.
This third highest honor in the country is not only recognition, but also the confidence to move forward. After the polishing and precipitation of competitions, Hu Dou Coffee has explored its own unique creative track and become increasingly mature and confident in the research and development of local flavor creative coffee.
