今年,这场全国顶级咖啡赛事首次落地贵阳。消息传来,本地咖啡主理人坐不住了,咖啡爱好者们更是奔走相告、满心期待。近期,贵阳万象城“环球咖香·贵阳集结”咖啡市集火热启幕,人头攒动、香气萦绕,尽显城市鲜活活力。
这场重磅赛事,带给贵阳咖啡的不仅是关注度的跃升,更是一堂含金量十足的“行业公开课”。在雷鸣看来,全国顶尖选手齐聚贵阳,带来前沿理念、新型器具与精湛冲煮技艺,通过面对面交流、实打实切磋,为本地从业者搭建了高效的学习提升渠道,助力整个行业提质升级。

穿过不足两米宽的老街窄巷,转角爬两层楼梯,黑石咖啡静藏于居民楼之间。没有闹市的喧嚣,只有闲适的氛围,不少市民直言,这里就像朋友家的客厅,自在又治愈。市民吴罗静楠并非周边住户,却常常专程前来,偏爱这份独有的松弛氛围感。
贵阳人素来偏爱走街串巷、探寻市井风味,生于此地的雷鸣亦是如此。无论店铺藏于深巷、隐于小区,只要风味地道、口感出众,总能吸引市民慕名打卡。独特的城市消费气质,滋养出贵阳咖啡独树一帜、烟火相融的发展风格。

咖啡于贵阳,并非突如其来的新兴业态,而是历经数十年沉淀的特色产业。早在2000年前后,独立咖啡馆便悄然出现在贵阳街头。老牌咖啡馆“昨日重现”承载了一代贵阳人的记忆,彼时“我不在昨日重现,就在去昨日重现的路上”这句话,更是风靡全城,成为城市独特印记。
数十年深耕积淀,让贵阳咖啡深深扎根于城市烟火之中,积淀出深厚的行业底蕴。
结束上午的评审培训,雷鸣赶回店里,牵头开展杯测交流活动。一众本地咖啡主理人齐聚一堂,品鉴精品生豆、切磋冲泡技艺、探讨行业趋势,交流氛围热烈浓厚。北京朗巴赫咖啡生豆公司品控负责人朴美瑛坦言,贵阳咖啡从业者深耕专业、乐于交流的氛围,让她倍感惊喜。
“乔治咖啡彭近洋、对的咖啡胡颖,是我们这批贵阳咖啡人的启蒙者。”雷鸣感慨,如今贵阳咖啡能够破圈出彩、稳步崛起,离不开一代代从业者的坚守深耕、抱团前行与专业深耕。
立足本土、持续出新,是贵阳咖啡长久不衰的活力密码。近期,黑石咖啡全新研发的“奶洗冷萃”,在推广阶段收获一众好评,即将正式上线。“我们坚持每个季度推出一款新品,保持业态新鲜感和创新活力。”雷鸣笑着说道,不少老顾客熟知店内所有品类,时常主动催更新品、新豆。消费者的期待,倒逼本地咖啡馆持续探索、大胆创新,在一次次尝试打磨中,解锁多元风味、丰富业态内涵。
向内求变深耕品质,向外贴合市场需求,贵阳咖啡在时光淬炼中走出了一条属于自己的成长之路。
出山,入黔 活泛城市氛围
深耕本土的同时,贵阳咖啡主动走出山城,奔赴更广阔的舞台。
知名咖啡品牌“乔治队长”主理人彭近洋,在上海打造的“风味博物馆”咖啡店常年人气爆棚、排队不息,众多食客专程打卡,只为品味地道独特的贵州咖啡风味。
从深藏街巷的本土小店,到立足全国的特色IP,贵阳咖啡不再局限于本地市场,逐步在全国多个城市站稳脚跟、打响名气。一杯杯黔味咖啡,成为展示贵州、推介贵阳的鲜活窗口,让全国游客透过醇香咖味,读懂这座城市的独特魅力。

贵阳咖啡的出圈之路步履不停。今年2月,雷鸣在杭州萧山北干街道牵头举办“生活发酵节”,将浓郁黔味带到江南大地。活动现场,贵州风味手冲咖啡台前游客络绎不绝,热气翻滚的黔东南酸汤、吸睛十足的“村T”,全方位展现贵州烟火与新潮气质。
黄粑、土豆片、洗沙月饼等特色贵州小吃,被精心摆盘、搭配咖啡,亮相黑石咖啡杭州门店,碰撞出奇妙的风味火花。“原本只是尝试搭配咖啡轻食,没想到贵州小吃广受食客喜爱、销量可观。”雷鸣表示,他始终希望以咖啡为纽带,将精品咖啡、精酿啤酒、精美餐饮、精彩文创、精致旅居的贵州“五精”特色业态向外推广,让更多人看见贵州好物、感受贵州魅力。
既要走出去拓圈,也要引进来赋能。如今,咖啡产业已然成为贵阳文旅融合的全新流量入口,为城市发展注入全新活力。自2024年起,越来越多外地游客专程奔赴贵阳,不为山水风光,只为赴一场咖香之约,打卡各类特色独立咖啡馆。不少咖啡爱好者专程留城数日,逐一解锁社交平台出圈的贵阳咖啡门店。
顺势而为、借势而上,贵阳稳稳接住咖啡文旅新流量。云岩区文旅局推出“咖啡迷宫・老城寻味”城市漫步主题路线,串联辖区特色独立咖啡馆与核心文旅节点,将单一的短时咖啡消费,延伸为沉浸式、全天候的城市文旅体验。
一杯咖啡带旺一城人气,人流集聚带动消费涌动、产业联动,让老街老城焕发新生,让整座城市愈发鲜活灵动、朝气蓬勃。
接力,深耕 锤炼产业韧劲
产业长远发展,人才是核心根基。今年九月开学季,贵州大学将新增咖啡选修课,精准补齐贵阳咖啡产业长期面临的专业人才短缺短板。
“咖啡从业者绝非简单的服务人员,咖啡萃取、风味调试、品质把控,都需要扎实的专业知识支撑。”在雷鸣看来,缺乏系统化、专业化学习,不仅会限制从业者的成长空间,更会制约整个行业的标准化、品牌化发展。
人才培育,已然成为贵阳咖啡产业提质升级、长远发展的必答题。

为此,本地咖啡从业者主动担当、躬身深耕。去年,雷鸣依托自有咖啡烘焙工厂,创办黑石咖啡学院,截至今年6月30日,已累计开课7次,培育学员12名,为行业输送实战型基层人才。
但仅靠从业者培训还不够。把高层次人才引进来,行业才能扎稳根。
去年8月,贵阳咖啡产业学院在贵阳职业技术学院正式挂牌成立,构建起全链条人才培养体系。课程覆盖咖啡种植加工理论、萃取调制实操、咖啡文旅产品策划等全产业链内容,全方位适配产业发展需求。
同时,学院联动“Nectar One”“乔治队长”等知名咖啡品牌,共建智慧咖啡实验室实训基地,推行“学历证书+职业技能证书”双证融通模式,打通校园实训与市场实战的衔接通道,让专业人才学有所用、学以致用。
“贵阳咖啡的技术,也是在一次次行业切磋中磨出来的。”雷鸣说,本地头部品牌形成“以赛代练、赛训结合”的传统,“这次全国总决赛落地贵阳,就是一块试金石。”
如今,高校特色课程托举、职业院校体系培育、行业自主培训兜底,多层次、全方位的人才培育体系逐步成型,持续夯实贵阳咖啡产业发展底盘。
从一粒生豆到一杯精品咖啡,越来越多青年人才扎根赛道、深耕行业,为贵阳咖啡产业迭代升级注入源源不断的新生力量。
从街巷小店走向全国赛场,贵阳咖啡在坚守中沉淀,在开放中成长。全国顶级赛事落地贵阳,是行业对本地咖啡产业实力的认可,也为城市文旅融合、产业提质赋能新机。一杯醇香咖啡,藏着贵阳包容开放的城市底色,也让黔味风味越走越远。

In the eyes of Lei Ming, top players from all over the country gathered in Guiyang, bringing cutting-edge concepts, new equipment, and exquisite brewing skills. Through face-to-face communication and practical exchanges, they built an efficient learning and upgrading channel for local practitioners, helping the entire industry to improve and upgrade.

In February of this year, Lei Ming led the "Life Fermentation Festival" in Beigan Street, Xiaoshan, Hangzhou, bringing the rich Guizhou flavor to the land of Jiangnan. At the event, tourists flocked to the Guizhou style handmade coffee table, where the hot and steamy Qiandongnan sour soup and eye-catching "Village T" showcased Guizhou's fireworks and trendy atmosphere from all angles.
Featured Guizhou snacks such as Huangba, potato chips, and washed sand mooncakes were carefully arranged and paired with coffee, appearing at the Blackstone Coffee Hangzhou store, creating wonderful flavor sparks. Originally, I was just trying to pair it with coffee snacks, but I didn't expect Guizhou snacks to be widely loved by diners and have considerable sales. Coffee practitioners are not simply service personnel. Coffee extraction, flavor adjustment, and quality control all require solid professional knowledge support. In Lei Ming's view, the lack of systematic and specialized learning not only limits the growth space of practitioners, but also restricts the standardization and branding development of the entire industry.
Talent cultivation has become a necessary question for the quality upgrading and long-term development of Guiyang's coffee industry.
