8月31日,山东滨州邹平,循着浓郁的咖啡香,记者走进山东优然咖啡有限公司。
偌大的生产车间内,十几米高的钢制塔体直抵屋顶,纵横交错的管道连接着密密麻麻的阀门。淡绿色的咖啡生豆经过烘焙、萃取、分离、浓缩、干燥等一系列工序,变成细密的速溶咖啡粉。
这是目前全球最大的单体速溶咖啡生产项目,年产速溶咖啡粉可达1.2万吨。换算成一杯杯咖啡,大约有50亿杯,足够全美国每人每天喝一杯,连续喝上近半个月。

一座山东县级市里,藏着全球最大的单体速溶咖啡生产项目,已经足够出人意料。
更令人想不到的是,山东优然咖啡有限公司(下称“优然”)这套庞大的生产系统,并非来自国外,而是由距离这里不远的邹平双飞成套设备有限公司(下称“双飞”)提供。
更“巧”的是,两家企业的创始人,都是邹平本地人——郑高飞。
郑高飞出生于1979年,毕业于大连理工大学,最初从事干燥设备研发。如今,他的速溶咖啡设备已经卖到印度尼西亚、越南、俄罗斯等多个国家和地区,累计出口额约4亿美元,所支撑的速溶咖啡产能约占全球总产能的10%。
一位县城出身的工程师,如何把咖啡装备卖到世界各地?
故事要从2005年说起。
那一年,一家印度尼西亚大型食品企业找到郑高飞,希望他试制速溶咖啡生产线中的干燥设备。“客户一开始没抱太大希望。”在郑高飞的记忆里,对方给出的要求甚至有些“宽松”:“先做出一个半成品,后面再慢慢改。”
这并不奇怪。
干燥,是把浓缩后的咖啡液变成速溶咖啡粉的关键一步。它看起来只是把水分蒸发掉,其实远没有这么简单:温度高了,咖啡香气容易损失;雾化效果不好,粉体颗粒就难以达到要求;压力、进料速度、充气量等参数稍有变化,都可能影响最终产品的色泽、溶解性和风味。
“当时可供借鉴的成熟经验并不多。”郑高飞回忆,经过反复试验和调试,自己按时交付了设备,咖啡粉各项指标均达到客户要求,效果远超对方最初预期。
这次经历让郑高飞意识到:过去长期由国外企业占据优势的咖啡装备,国人并不是做不出来。于是,他联合大连理工大学于才缘教授,开始系统研究速溶咖啡生产工艺。
“从烘焙到萃取,从分离到浓缩,再到最后的干燥,我们一台设备一个环节地研究,一个问题一个问题地解决。”郑高飞介绍,在2009年,团队终于打通速溶咖啡生产的主要环节,从制造单台干燥设备迈向提供完整生产线。
但真正困难的事情,也从这时开始。
“不同产地的咖啡豆,含水率、密度、颗粒度和风味特征不同,每个客户对咖啡的色泽、香气、溶解性和得率要求也不。几乎每接一个新项目,都会碰到过去没有遇到过的问题。”郑高飞坦言,自己只能“边干边改”,但随着项目越做越多,零散的经验逐渐变成一套完整的技术体系。
郑高飞给这种方式起了一个很形象的名字:“手搓”。
所谓“手搓”,当然不是几个人关起门来,真的用手搓出一条生产线。它更像是一种工程师的笨办法:没有现成答案,就从客户要生产什么产品开始,一项项研究原料、一遍遍调整参数、一处处修改设备,把每个项目里遇到的问题从根源上解决掉。

20年间,这种“笨办法”越做越快。
郑高飞算了一笔账:同样一条年产5000吨的速溶咖啡生产线,进口设备报价约3亿元,交付周期通常需要两年左右;双飞同类生产线价格约4000万至5000万元,交付周期可以压缩到10个月。
更低的成本和更快的交付速度,为双飞迅速打开了海内外市场。据郑高飞估算,国内约9.3万吨速溶咖啡产能中,约9.1万吨由双飞设备支撑;近5年来,全球新增速溶咖啡项目中,约一半采用了双飞生产线。
但随着市场不断扩大,郑高飞慢慢发现:仅仅会造设备,又不够了。
“传统速溶咖啡之外,冻干咖啡、咖啡液等新产品不断出现,消费者需求每变化一次,后端生产线都要跟着升级。”他说,“我们不只要知道一台设备该怎么造,还得知道下一杯咖啡会是什么样,要真正走近消费者。”

2024年,郑高飞又作了一个决定:从装备制造向咖啡食品加工延伸,成立山东优然咖啡有限公司。
“双飞把设备做出来,优然再把设备变成产品。”郑高飞这样解释两家企业的定位。
两家公司由此形成了一个相互验证、相互反哺的闭环:双飞研发的设备,可以先在优然的生产线上接受实际检验;优然在生产中积累的数据和遇到的问题,又能反过来推动双飞改进设备和工艺。客户来考察时,优然的工厂也成了双飞最直观的“样板间”。
在与记者的交谈中,郑高飞很少谈什么“颠覆”。
这些年,他做得最多的事情,就是跑客户、看项目、研究产品和工艺。市场上出现一款新咖啡,他要琢磨它为什么受欢迎;客户提出一种新需求,他要继续研究,这种产品怎样才能被稳定制造出来。
这也是这家山东企业进入全球市场的路径。没有突然出现的风口,也没有一招制胜的技术。从一台干燥设备起步,郑高飞和团队用了20年,把一个个具体问题做深、做透,最后将这些解决问题的能力,变成一条条销往世界各地的速溶咖啡先进生产线。
咖啡常常让人联想到精致与松弛,却很少有人注意到,一杯香浓咖啡背后,还有冰冷的钢板、纵横的管道,以及仪表盘上不断跳动的工艺参数。一个邹平人,就这样从这些“看不见”的地方入手,把山东制造“手搓”进了全球咖啡产业链。

This is currently the world's largest single unit instant coffee production project, with an annual output of up to 12000 tons of instant coffee powder. Converted into cups of coffee, there are approximately 5 billion cups, enough for every person in the United States to drink one cup per day for nearly half a month.
In a county-level city in Shandong, the world's largest single unit instant coffee production project is hidden, which is already surprising enough.
What is even more unexpected is that the huge production system of Shandong Youran Coffee Co., Ltd. (hereinafter referred to as "Youran") is not from abroad, but provided by Zouping Shuangfei Complete Equipment Co., Ltd. (hereinafter referred to as "Shuangfei") not far from here.
Even more coincidentally, the founders of both companies are local residents of Zouping - Zheng Gaofei.
Zheng Gaofei was born in 1979 and graduated from Dalian University of Technology, initially engaged in the research and development of drying equipment. Nowadays, his instant coffee equipment has been sold to multiple countries and regions such as Indonesia, Vietnam, and Russia, with a cumulative export value of about 400 million US dollars, supporting about 10% of the world's total instant coffee production capacity.
How can an engineer from a county town sell coffee equipment to various parts of the world?
The story begins in 2005.
That year, a large Indonesian food company approached Zheng Gaofei, hoping that he could trial produce drying equipment for an instant coffee production line. At the beginning, the customer didn't have much hope. "In Zheng Gaofei's memory, the requirements given by the other party were even somewhat" lenient ":" Make a semi-finished product first, and then slowly make changes later
This is not surprising.
Drying is a crucial step in turning concentrated coffee into instant coffee powder. It looks like it just evaporates water, but it's not that simple: as the temperature rises, the aroma of coffee is easily lost; If the atomization effect is not good, the powder particles will be difficult to meet the requirements; Slight changes in parameters such as pressure, feed rate, and inflation rate may affect the color, solubility, and flavor of the final product.
At that time, there were not many mature experiences available for reference, "Zheng Gaofei recalled. After repeated experimentation and debugging, he delivered the equipment on time, and all indicators of the coffee powder met the customer's requirements, with results far exceeding their initial expectations.
This experience made Zheng Gaofei realize that the coffee equipment that had long been dominated by foreign companies in the past was not something that Chinese people could not do. So, he teamed up with Professor Yu Caiyuan from Dalian University of Technology to systematically study the production process of instant coffee.
From baking to extraction, from separation to concentration, and finally to drying, we study each equipment step by step and solve each problem step by step. "Zheng Gaofei introduced that in 2009, the team finally broke through the main links of instant coffee production, moving from manufacturing a single drying equipment to providing a complete production line.
But the truly difficult things also start from then on.
Coffee beans from different regions have different moisture content, density, particle size, and flavor characteristics. Each customer has different requirements for the color, aroma, solubility, and yield of coffee. Almost every time they take on a new project, they will encounter problems that they have not encountered before. "Zheng Gaofei admitted that he could only" work while making changes, "but as he worked on more and more projects, his scattered experience gradually became a complete technical system.
Zheng Gaofei gave this method a very vivid name: 'Hand Rubbing'.
The so-called 'hand rubbing' is not about a few people closing the door and really rubbing a production line with their hands. It's more like an engineer's clumsy approach: without a ready-made answer, starting from what product the customer wants to produce, researching raw materials one by one, adjusting parameters repeatedly, and modifying equipment one by one, solving the problems encountered in each project from the root.
Over the past 20 years, this' stupid method 'has been getting faster and faster.
Zheng Gaofei calculated that for the same instant coffee production line with an annual output of 5000 tons, the imported equipment price is about 300 million yuan, and the delivery cycle usually takes about two years; The price of similar production lines in Shuangfei is about 40 million to 50 million yuan, and the delivery cycle can be compressed to 10 months.
Lower costs and faster delivery speeds have quickly opened up domestic and international markets for Shuangfei. According to Zheng Gaofei's estimation, of the approximately 93000 tons of instant coffee production capacity in China, about 91000 tons are supported by Shuangfei equipment; In the past five years, about half of the newly added instant coffee projects worldwide have adopted the Double Fly production line.
But as the market continued to expand, Zheng Gaofei gradually realized that just being able to make equipment was not enough.
In addition to traditional instant coffee, new products such as freeze-dried coffee and coffee liquid are constantly emerging. With every change in consumer demand, the backend production line needs to be upgraded accordingly, "he said." We not only need to know how to make a device, but also know what the next cup of coffee will look like. We need to truly approach consumers
In 2024, Zheng Gaofei made another decision: to extend from equipment manufacturing to coffee food processing and establish Shandong Youran Coffee Co., Ltd.
Shuangfei creates the equipment, and Yuran turns it into a product, "Zheng Gaofei explained the positioning of the two companies.
The two companies thus formed a closed loop of mutual verification and feedback: the equipment developed by Shuangfei can first undergo actual inspection on the production line of Youran; The data accumulated and problems encountered by Youran in production can in turn drive Shuangfei to improve equipment and processes. When customers came to inspect, Youran's factory also became the most intuitive "model room" for Shuangfei.
In conversations with reporters, Zheng Gaofei rarely talks about "subversion".
In recent years, the most he has done is running clients, reviewing projects, researching products and processes. A new coffee has appeared in the market, and he wants to figure out why it is popular; The customer has raised a new requirement and wants to continue researching how this product can be stably manufactured.
This is also the path for this Shandong enterprise to enter the global market. There are no sudden trends or winning techniques. Starting from a drying equipment, Zheng Gaofei and his team spent 20 years delving into specific problems, and finally turning these problem-solving abilities into advanced production lines for instant coffee sold around the world.
Coffee often reminds people of delicacy and relaxation, but few people notice that behind a cup of fragrant coffee, there are cold steel plates, vertical and horizontal pipes, and constantly jumping process parameters on the dashboard. A person from Zouping started from these 'invisible' places and 'hand rubbed' Shandong manufacturing into the global coffee industry chain.
