5月21日—22日，2026年上海市职工职业技能竞赛｜第二十六届全国焙烤职业技能竞赛上海赛区选拔赛·全国咖啡师技能比赛，在上海虹桥国家会展中心火热开赛。上海及长三角地区共32名优秀咖啡师同台竞技，以赛促技，展现新时代咖啡行业从业者的专业风采。

本次赛事由上海市食品协会、上海市职工技术协会、上海轻工业工会联合会、徐汇区总工会、徐汇区人力资源和社会保障局联合主办。上海市现代食品职业技能培训中心、上海市食品协会高技能人才培养基地、上海市食品协会咖啡专业委员会、上海市技师协会西点烘焙专业委员会等机构承办。徐汇区虹梅街道总工会、国家级干文华技能大师工作室协办。

赛场内，整洁有序的操作台一字排开，咖啡机、磨豆机、手冲器具整齐摆放，浓郁醇厚的咖啡香气弥漫全场。参赛选手们要在12分钟限时操作时间里，依次完成意式浓缩咖啡制作、两杯相同图案的咖啡拉花、手冲咖啡制作三大竞赛项目。从研磨咖啡豆、精准萃取浓缩液，到稳控奶泡、勾勒细腻流畅的拉花纹路，再到把控水温、流速、粉水比完成手冲萃取，选手们将多年打磨的专业功底、对咖啡风味的理解与审美巧思，融入方寸操作台，用指尖技艺诠释匠心精神。

赛事评委团队从饮品风味、萃取稳定性、拉花构图美感、操作规范性、卫生细节、时间把控等多个维度，对选手作品与实操过程进行细致打分、严谨评判。评委们认真观察每一位选手的操作流程，细致品鉴咖啡口感风味，精准记录各项得分，专业严谨的评审态度，为赛事质量筑牢根基，也为选手技艺提升提供专业指引。

On May 21-22, the 26th National Baking Vocational Skills Competition Shanghai Selection Competition and National Barista Skills Competition of the 2026 Shanghai Employee Vocational Skills Competition kicked off at the Hongqiao National Convention and Exhibition Center in Shanghai. A total of 32 outstanding baristas from Shanghai and the Yangtze River Delta region competed on the same stage, promoting their skills through the competition and showcasing the professional style of coffee industry practitioners in the new era.

This competition is jointly organized by the Shanghai Food Association, Shanghai Workers' Technical Association, Shanghai Federation of Light Industry Trade Unions, Xuhui District Federation of Trade Unions, and Xuhui District Human Resources and Social Security Bureau. Inside the arena, neat and orderly workstations are arranged in a straight line, with coffee machines, grinders, and hand drawn utensils neatly arranged. Contestants are required to complete three major competition projects in sequence: making Italian espresso, two cups of coffee latte art with the same pattern, and hand brewed coffee within a 12 minute time limit. From grinding coffee beans, precise extraction of concentrated liquid, to stable control of milk foam, outlining delicate and smooth latte patterns, to controlling water temperature, flow rate, and powder water ratio to complete hand drawn extraction, contestants have integrated years of professional polishing skills, understanding of coffee flavor, and aesthetic ingenuity into the square operation platform, interpreting the spirit of craftsmanship with fingertip skills.

The competition judging team carefully scores and rigorously evaluates the contestants' works and practical processes from multiple dimensions such as beverage flavor, extraction stability, floral composition beauty, operational standardization, hygiene details, and time control. The judges carefully observe the operation process of each contestant, carefully taste the taste and flavor of coffee, accurately record various scores, and have a professional and rigorous judging attitude, laying a solid foundation for the quality of the competition and providing professional guidance for the improvement of contestants' skills.
