颠覆味蕾!野生菌、火腿跨界入“咖”
本届咖啡产业馆组展面积较上一届增长10%,184家参展企业同台亮相,完整呈现咖啡全产业链发展生态。最让人眼前一亮的,当属咖啡与云南本土特色食材跨界融合的创意饮品,打破大众对传统咖啡的固有印象。

“高黎贡山咖啡、怒江老窝火腿再加有机红茶,便形成咸香风味咖啡。”泸水市供销社咖啡师陈高强把怒江最具特色的产品调和在一起,把云南烟火气发挥到极致。
爱伲咖啡展位前始终排着长队,招牌野生菌特调咖啡成为爆款产品。“这款创意饮品巧妙融合云南野生菌的鲜香与精品小粒咖啡的醇厚。”爱伲咖啡运营总监仓秀红介绍,无毒白牛肝菌制作绵密奶盖,再以螺旋藻还原野生菌标志性色泽,复刻出趣味十足的见手青拿铁,让观众感受云南风味的奇思妙想。

本土食材与咖啡的大胆跨界混搭,不仅打造出独树一帜的滇味咖啡风味,也凭借新奇口感吸引了大批游客与海内外采购商驻足品鉴,他们纷纷为云南咖啡的创新能力点赞。“我们在南博会对接了日本、韩国、迪拜等地客商并达成合作,这里是我们展示品牌风采的绝佳舞台。”连续三年参展的爱伲咖啡董事长刘明辉表示,依托南博会,企业稳步打开对外发展新格局。
古法细磨慢煮间,读懂中式咖啡浪漫
展馆内,古朴的古法咖啡体验区自成一景,中式咖啡制作技艺精彩重现。“咖啡在云南有上百年的种植饮用历史,”保山比顿咖啡总经理方明峰介绍,古法制作的咖啡风味独特,炭火熬煮的山泉水能烘托出咖啡更醇厚的口感,传统器具手工研磨咖啡豆能最大程度锁住咖啡豆原生香气。煮制完成后,还会加入云南本土红糖、坚果碎进行调配,中和咖啡苦涩,口感香甜绵柔。

“希望更多人近距离感受中国传统咖啡制作技艺的魅力,品味沉淀百年的咖啡文化。”方明峰把古法咖啡制作技艺放在展位最显眼的位置,期待参观者读懂云南咖啡的历史传承。此外,保山比顿咖啡携手怒江知子罗咖啡,以“一杯咖啡6把钥匙”为参展主题,实现双产区、双品牌联动,为观众带来更全面的云南咖啡体验。

南博会搭建起开放共享的广阔平台,让藏于云南山野的咖啡故事走向台前。一缕咖香牵起百年时光,聚光灯下,中式咖啡的浪漫不止在古法慢煮的仪式感里,更藏在产区坚守、文化赋能、产业升级的步履之中。
咖啡渣做周边,小小文创走出国门
从舌尖美味转向日用好物,各类咖啡主题文创产品构思精巧,将云南民俗、绿色环保理念融为一体,成为热销产品。上海励品实业带来的咖啡杯系列文创产品,凭借新颖设计收获超高人气。

“这是含30%咖啡渣的环保咖啡杯,把咖啡渣变废为宝,杯身还可定制多样图案。”上海励品实业有限公司工作人员李怡一边展示,一边向记者介绍。“本次南博会上,融合云南传统民俗的瓦猫系列盲盒杯具、适配昆明的鲜花杯套与手提袋都很受欢迎。”李怡表示,近年来,特色文创借助南博会平台远销南亚东南亚,成为对外展示咖啡文化的载体。展会现场也有不少客商前来洽谈合作。

Gaoligongshan coffee, Nujiang Laowo ham, and organic black tea together form a salty and fragrant coffee. "Chen Gaoqiang, a barista from Lushui Supply and Marketing Cooperative, blended Nujiang's most distinctive products together, bringing Yunnan's fireworks to the extreme.
There is always a long queue in front of the Aini Coffee booth, and the signature wild mushroom specialty coffee has become a popular product. This creative beverage cleverly blends the freshness of Yunnan wild mushrooms with the richness of premium small grain coffee, "said Cang Xiuhong, the director of operations at Aini Coffee. The non-toxic white boletus mushroom is used to make a dense milk cap, and then spirulina is used to restore the iconic color of wild mushrooms, creating a fun and whimsical blue latte that allows viewers to experience the whimsical Yunnan flavor.
