一杯醇香咖啡,解锁多重消费体验。如今在厦门,传统咖啡馆的单一消费模式正在被打破,“咖啡+艺术观展”“咖啡+造型设计”“咖啡+文创消费”等跨界融合业态悄然走红。休闲茶饮、美学体验、艺术消费、社交打卡多场景深度融合,沉浸式、体验式消费也在厦门的咖啡店中流行起来。
跨界融合的破圈探索
位于思明区民族路沙坡尾片区的太贤咖啡,将咖啡和艺术深度融合。暖色调的咖啡休闲区毗邻专业展厅,墙面常态化陈列当代艺术家画作与小众艺术展品,消费者可以手捧咖啡悠然赏画,遇见心仪作品即可现场咨询、选购定制。“整个空间分成3个功能区。”门店合伙人许先生介绍,第一部分即咖啡吧,主打手磨咖啡;第二部分是展厅兼画廊;第三部分则是半封闭的办公、待客区域。
“传统门店业态单一,顾客停留时间短、复购黏性有限。”许先生说,相比传统单一咖啡店,现在的业态让顾客平均停留时长明显增加,不少艺术爱好者隔三岔五就来坐一坐,人气明显高了不少。在许先生看来,“咖啡+艺术”的门店定位,引入休闲、社交、打卡、体验等多重属性,能通过社交媒体快速出圈,可谓一举多得。
位于湖里区的似汀陶艺咖啡店,则将陶艺手作与咖啡体验融为一体。主理人陈祎玮是一名“00后”创业者,大学毕业后选择在家门口开店。“我本身是学陶艺专业的,想把咖啡和陶艺融合起来。”这家毗邻居民小区的咖啡店,还与音乐工作室结合,形成“陶艺+音乐+咖啡”的社区合作模式。陈祎玮说,目前陶艺体验以预约为主,因为陶艺需要手把手指导,从演示到完成一件作品通常要两个小时,烧制完成后再通知客人取走或邮寄。
另一股“咖啡+赛车”的新风,则吹进了位于象屿保税区的CarbonCoffee汽车主题咖啡馆。主理人团队由3名女生组成,她们将原先陈旧的空间进行改造,手工钉上欧松板,粉刷墙面,打造出挑高5米的开阔空间。店内不仅展示赛车,还配备了3台专业赛车模拟器,成为赛车车友的线下据点,几乎每周末都有活动,包括车友与宠物的社群活动,还有汽车品牌活动。
多元场景的沉浸体验
喝杯咖啡的时间,串联起休闲、社交、艺术、生活服务多重体验,这种新模式改变了“咖啡只是饮品”的传统消费认知。
在CarbonCoffee,不少车友把这里当作周末聚会的首选。经常到店的车友李力说:“这里不仅能喝咖啡,而且能和赛车同好交流心得。”
在店里,一些客人还会带上宠物狗,一边聊车一边交流养宠心得。有消费者在社交平台留言:“哪怕不玩车,在这里喝杯咖啡、看看车、撸撸狗,也能待上一个下午。”店内的赛车模拟器同样向普通消费者开放,不少人因此第一次近距离接触赛车文化,感受到速度与咖啡碰撞的乐趣。
在似汀,到店的消费者几乎都是年轻面孔。陈祎玮告诉记者,学生群体占比较大,一到暑假,人就明显多了起来。也有外地客人慕名而来——一名福州姑娘在社交平台刷到这家店后专程赶来,原本只是体验,后来干脆留下来学习两个星期,回去后自己在福州开了一家陶艺吧。还有一名探店博主体验后非常喜欢,主动留下当学徒,后来开了咖啡店,还在店里展示和售卖自己制作的陶艺杯子和冰箱贴。
这样的例子还有不少:开在湖滨中路的一家名为RealLiveAndBook的门店,客人可以白天喝咖啡、晚上看乐队表演,这里因此被网友称作“厦门独一家书店+咖啡+唱片+Livehouse复合空间”,如今拥有不少忠实粉丝。在展鸿路附近的Lalaland咖啡美发沙龙,店内设有独立的完整咖啡厅,被用户称为“厦门颜值最高的美发空间之一”。
“从‘咖啡+艺术’到‘咖啡+赛车’再到‘咖啡+美发’,厦门咖啡馆的跨界融合正在打破业态边界,咖啡从单纯的饮品重塑为连接多元生活方式的空间载体。”厦门市烘焙与咖啡协会咖啡分会负责人宋伟前表示,当下厦门咖啡行业的多元跨界融合,说明咖啡早已跳出单一餐饮赛道,各行各业都想借一杯咖啡打破固有印象,遍地都是传统行业跨界咖啡的惊喜——老牌邮政开出邮局咖啡,中石化、中石油加油站布局咖啡点位,依托车流高频场景,赶路途中顺手买一杯便捷咖啡,还有图书馆咖啡、医院咖啡、宠物主题咖啡等。这些业态与其说是咖啡在不同经营场所的跨界,不如说是咖啡与不同生活方式的融合。在这里,咖啡不再是简单的提神饮品,而是一种载体,打通了不同行业的边界。各式各样的跨界咖啡馆,成为年轻人线下聚谈、交流互动的城市“第三空间”,门店场景氛围、文化格调所带来的人际联结及社交价值,早已超越饮品本身。

The host Chen Yiwei is a post-2000 entrepreneur who chose to open a store right in front of his home after graduating from university. This coffee shop, located adjacent to a residential area, has also been combined with a music studio to form a community cooperation model of "pottery+music+coffee". Chen Yiwei said that currently, pottery experience is mainly based on appointments, as pottery requires hands-on guidance.
