“若非亲眼所见,我根本不会知道这里也产咖啡。”丁志近日在他的咖啡庄园接受采访时说,“若要实现真正的推广,就需要打磨一个充满人情味的故事。”
2009年的高黎贡山之行开启了丁志长达17年的新征程。他立志要让这些被遗忘的咖啡豆再次迎来高光时刻,并打造一家具有东方人文底蕴和生活态度的咖啡馆。
事实上,丁志的人生新旅程始于2008年汶川大地震后的一段经历。灾后数周,丁志一直坚守在灾区,全身心地投入到救援工作中。当那些因灾致孤的孩子问他下次何时来时,他把这句话牢牢记在了心里。他咬牙变卖了老家的房产和轿车,去成都开了一家名为“壹丁咖啡”的小咖啡摊,谐音“一定”,既是自勉,亦是对孩子们的交代。
一个偶然的机会,丁志品尝了朋友分享的云南咖啡豆,惊喜地发现其风味品质竟丝毫不逊于自己长期使用的进口咖啡豆。他特意将云南咖啡的售价定得高于进口咖啡,因为坚信顾客的味蕾可以品尝出其中的区别。
在2009年探访过云南的产地后,丁志下架了所有进口豆,拍板决定以后只卖云南咖啡豆。后来,他又致力于实现从源头到成品的全程质量把关。2021年,他在保山建立了自己的咖啡庄园。为了土壤健康,他坚持树下留草,并用陶土缸发酵,这在别人眼中是不切实际的。不过,他却以此培育出了具有独特风味的咖啡豆。
丁志回忆说,当时别人说我疯了,不过若想让那些被遗忘的咖啡豆重获生机,就得心甘情愿地去做一些在别人看来有些傻气的事。
在投身咖啡事业的同时,丁志还践行着一项宏大的公益使命。他深知“物资只能解燃眉之急,书籍才能照亮孩子们的未来”,于是开着那辆旧皮卡跑遍万里山路,足迹遍布四川、云南及西藏自治区,累计捐赠图书40万册,并援建了107座图书馆。其中第100座图书馆于2024年在保山的一所中学落成,馆内特设了一座小型的“咖啡主题博物馆”,旨在向当地学生普及家乡的文化遗产与历史传承。
2025年5月,丁志开启了一项传奇计划,即重走那条拥有2400年历史并且曾连接四川与缅甸、印度的“南方丝绸之路”。在长达33天的旅程中,他从四川广汉的三星堆出发,一路向南抵达云南腾冲。他独自策马前行,并为古道沿途的村民们送上云南咖啡。马匹病倒后,丁志便徒步穿越崎岖险峻的山路。无论走到哪里,他都不遗余力地向人们讲述云南“金牌咖啡豆”背后的传奇故事。
2026年,丁志有着更大的规划。他计划从腾冲启程,徒步穿越缅甸北部,最终抵达印度,将中国高山上的咖啡豆带向更广阔的世界。
正所谓“功夫不负有心人”,2023年,丁志打磨的云南咖啡成了成都大运会指定咖啡,为赛事提供了20万杯咖啡。
33年前,云南咖啡豆在布鲁塞尔荣获金奖。而今年,丁志计划将自己独创的陶土缸发酵法带到布鲁塞尔。
“如今,川菜已遍布世界各地,深受很多外国友人的喜爱。我相信,中国咖啡也必将同样受到欢迎。”他说。

The quality of coffee beans from Gaoligongshan in Yunnan has long been recognized worldwide. At the 42nd World Coffee Expo held in Brussels, Belgium in 1993, Baoshan small grain coffee produced in Gaoligong Mountain won the "Eureka" gold medal. 16 years later, Ding Zhi, a native of Sichuan, set foot on Gaoligong Mountain, determined to bring glory to the coffee industry on this land once again.
In 2009, Ding Zhi traveled for two days and two nights, taking trains, buses, and tractors, and finally arrived at Gaoligong Mountain. This trip originated from a casual question from a customer. When the customer asked Ding Zhi if Yunnan also produces coffee beans, he found himself unable to answer and decided to go and investigate.
What he saw and heard on the misty Gaoligong Mountain completely changed Ding Zhi's life. There are patches of iron pickup coffee trees growing there, and the unique flavor of iron pickup coffee beans won the "Eureka" Gold Award in Brussels as early as 1993. The 2009 trip to Gaoligong Mountain marked the beginning of Ding Zhi's 17 year journey. He is determined to bring these forgotten coffee beans back to their glory and create a coffee shop with Eastern cultural heritage and a positive attitude towards life.
In fact, Ding Zhi's new journey in life began with an experience after the Wenchuan earthquake in 2008. In the weeks after the disaster, Ding Zhi remained in the disaster area and devoted himself wholeheartedly to the rescue work. When the children who were orphaned by the disaster asked him when he would come next, he firmly remembered this sentence in his heart. He gritted his teeth and sold off the property and car in his hometown, and went to Chengdu to open a small coffee stall called "Yiding Coffee", which sounds like "certain" in Chinese. It was both a self motivation and an explanation to the children.
By chance, Ding Zhipin tasted Yunnan coffee beans shared by a friend and was pleasantly surprised to find that their flavor and quality were not inferior to the imported coffee beans he had been using for a long time. He deliberately set the price of Yunnan coffee higher than imported coffee because he firmly believed that customers' taste buds could taste the difference.
After visiting the production areas in Yunnan in 2009, Ding Zhi removed all imported beans and made a decision to only sell Yunnan coffee beans in the future. Later on, he devoted himself to achieving full process quality control from the source to the finished product. In 2021, he established his own coffee plantation in Baoshan. For the sake of soil health, he insists on leaving grass under trees and fermenting with clay jars, which is unrealistic in the eyes of others. However, he cultivated coffee beans with a unique flavor from this.
Ding Zhi recalled that at that time, others said I was crazy, but if I wanted to revive those forgotten coffee beans, I had to willingly do something that others thought was foolish.
While dedicating himself to the coffee industry, Ding Zhi also fulfills a grand public welfare mission. He knew that "materials can only solve urgent problems, and books can illuminate the future of children", so he drove the old pickup truck all over the mountains, covering Sichuan, Yunnan and Xizang Autonomous Region, donated 400000 books in total, and helped build 107 libraries. The 100th library was completed in 2024 at a high school in Baoshan, and a small "coffee themed museum" was set up inside the library to promote the cultural heritage and historical inheritance of the hometown to local students.
In May 2025, Ding Zhi embarked on a legendary plan to retrace the 2400 year old "Southern Silk Road" that once connected Sichuan with Myanmar and India. During the 33 day journey, he departed from Sanxingdui in Guanghan, Sichuan and headed south to Tengchong, Yunnan. He rode alone and brought Yunnan coffee to the villagers along the ancient road. After the horse fell ill, Ding Zhi hiked through rugged and steep mountain roads. Wherever he goes, he spares no effort to tell people the legendary story behind Yunnan's "gold medal coffee beans".
In 2026, Ding Zhi has bigger plans. He plans to set off from Tengchong, hike through northern Myanmar, and eventually reach India, taking the coffee beans from China's high mountains to a wider world.
As the saying goes, 'Hard work pays off.' In 2023, Ding Zhi's Yunnan coffee became the designated coffee for the Chengdu Universiade, providing 200000 cups of coffee for the event.
33 years ago, Yunnan coffee beans won a gold medal in Brussels. This year, Ding Zhi plans to bring his unique clay fermentation method to Brussels.
Nowadays, Sichuan cuisine has spread all over the world and is deeply loved by many foreign friends. I believe that Chinese coffee will also be equally popular, "he said.
