Recently, in the "Meeting Zhaozhou" Gongfu Workshop in Zhao County, staff were making pear paste coffee. Photo by Zhai Yujia
On September 5th, following the fragrance of pears, the reporter arrived at the "Meeting Zhaozhou" Gongfu Workshop Experience Area not far from Zhaozhou Bridge. A copper pot was steaming hot, emitting fine bubbles. Amber pear paste slowly flowed down from the spoon, thick enough to pull out threads. Originally, the staff was showing tourists how to make pear paste.
Picking pears, washing pears, steaming pears, pounding pears, and extracting juice... After several processes, the ancient method of boiling pear paste is completed. The staff slowly infused rich coffee into the pear paste, and tradition and fashion collided wonderfully in a cup of beverage. "In the research, development and production of pear paste coffee, we integrated the production technology of intangible cultural heritage pear paste into new coffee, neutralized the bitterness of coffee, preserved the sweetness of snow pear, and hit out the unique flavor of 'traditional intangible cultural heritage+new tea drink', which is popular with consumers." Liu Chang, the workshop leader, introduced.
Intangible cultural heritage should not only be on the stove, but also enter commercial districts, scenic spots, and places that young people can easily reach. While adhering to intangible cultural heritage skills, we are also actively expanding the sales of pear paste coffee. "Under the guidance of Liu Chang, the reporter saw an AI unmanned coffee machine in the workshop. Click on the screen to place an order, and the intelligent robotic arm" gets busy "picking up cups, adding ingredients, and closing lids... Liu Chang introduced that this unmanned, 24-hour intelligent sales scene is gradually being spread in urban core commercial districts, public leisure spaces, universities, and other places, allowing traditional pear paste to leverage digital devices to achieve precise offline reach and automatic sales across the entire area, opening up the" fast lane "for intangible cultural heritage to enter the market.
Zhao County is the hometown of Chinese snowflake pears, with a total area of about 250000 acres of pear fruit. By 2025, the pear fruit output will be 754700 tons, and the county has 30476 ancient pear trees that are over a hundred years old. In the past, pear farmers only sold fresh fruits. Nowadays, various enterprises and workshops are constantly extending their industrial chain around this small snowflake pear. In addition to ancient pear paste, they have also developed diversified products such as small hanging pear soup, roasted pears, pear wine, pear vinegar, preserved pears, canned pears, etc. The annual output value of the entire industry chain is 4.08 billion yuan, and the products are exported to more than 30 countries and regions.
The extension of the industrial chain is not only on the assembly line in the workshop, but also connects fields, culture, and popularity. At the Beijing Xinfadi Pear Fruit Production Base (Qianwu Farm) in Changxin Er Village, Zhao County, the reporter caught up with a special field performance. Liang Suxia, the representative inheritor of the provincial-level intangible cultural heritage of Meihua Tune in Zhao County, is leading her students to perform under a pear tree. The sound of copper plates and drums interweave, one deep and one bright, one rigid and one soft, and the two correspond, attracting tourists to hold up their phones and keep filming. The pear orchard has become a stage, and intangible cultural heritage has become a scenery.
During the Pear Blossom Festival and Harvest Season, we plan exhibitions with different themes, such as Zhaozhou Fan Drum, Back Lamp Carrying Drum, and Plum Blossom Tune. The audience consists of three layers inside and three layers outside, "said Li Xing, the person in charge of Beijing Xinfadi Pear and Fruit Production Base (Qianwu Farm). During the event, they also explained to tourists the planting history of snowflake pears and the millennium story of Zhaozhou Bridge, allowing people to experience the rich beauty of ancient pear culture and cultural relics while picking and tasting the fruits.
