初秋的昆明,滇池的风里还飘着咖啡香。那是半个月前,主题为“滇咖聚 万物生”的第三届滇池国际咖啡文化嘉年华(以下简称“嘉年华”)留下的余味。8月1日至9日,200余辆咖啡车从全国52个城市驶入滇池东岸、西岸,9天里交织出646万人次的热闹,又在散场后,把这份香气一路带往各自驶向的远方。

作为昆明市连续3年打造的城市标杆文旅IP,今年,嘉年华迎来第三届。咖啡车是目前一种正在悄然生长的新兴商业形态。那么,这些驰骋在路上的年轻人,为何年复一年,在同一时间、同一地点如约重逢?他们长途跋涉的背后又有着怎样的归属、梦想与创业韧性?
流动的车也要专业
江山连续3年从长沙驱车1300公里赴会,今年更带来10辆咖啡车同行。
在他看来,自带轻松氛围、契合年轻人生活方式的咖啡车,之所以能成为一种商业形态,不仅因为便利、轻量,更因为车主们将热爱、创意和专业精神融入经营。
他的咖啡车名叫“不务正业”,但这恰恰是他最认真的副业。本职经营文化公司的他,因为妻子爱露营、自己痴迷咖啡,便将两样爱好合二为一,亲手将家用车打造成移动咖啡馆。从第一辆到现在的第五辆,每辆车都从零开始,像“养孩子”一样倾注情感。这次开到昆明的“心头好”,耗时9个月才完成,车上配备商用咖啡机、双冰箱、制冰机等,“和家装一样,花多少钱,取决于你想要什么生活状态。”
郎保文的“满杯绿豆沙”摊位前,巨大的绿豆玩偶是吸睛利器。自从抽签抽到此次嘉年华的摊位后,他就开始研究周围布局,重新设计了两套高辨识度的绿豆造型,所有视觉设计围绕年轻人的拍照传播需求展开。去年参加嘉年华一天最高卖出8500元的成绩,让他今年更笃定地走“规范化”路线:产品全部贴日期和保质期,公示栏亮出营业执照和健康证,员工统一佩戴有Logo的口罩和帽子,食材按生熟、即食与非即食分类密封,连摊位后方都架高离地以防积水污染。“流动车也要规范经营。”郎保文说。
范德张“怕醒(passion)咖啡”车则是一所移动的咖啡学堂。几名年轻人围坐着认真注水、观察萃取,这是他们花99元换来的1.5小时手冲教学体验。范德张的家乡云南保山市,是中国咖啡产业化发源地,咖啡种植面积15万亩、年产量2.4万吨,咖啡精品率70%以上、精深加工率85%以上,均居云南省第一。范德张经营的10余个品种咖啡全部采用保山咖啡豆,他以咖啡车为载体,在展会、咖啡节等活动中推广产品。持有高级咖啡师资格证的他最亮眼的设计就是“99元手冲教学体验”,“让顾客亲手做一杯咖啡,远比单纯卖一杯更有记忆。”他说,这门课让他获得了不少客户。
“咖啡车主的投入与创造,让咖啡车从一辆车变成各具特色的商业形态与品牌个性,也让它从‘路边摊’升级为一种被市场和消费者认可的微型商业体。”江山说。
咖啡车的AB面人生
但每一辆被认可的咖啡车背后,都有一本不算轻松的账。这本账里有情绪、时间、身体、产品等,有时候甚至是理想和现实之间的拉扯。
卢邑鑫(化名)是第二次参加嘉年华,这名在湖南一家医院检验科工作的医生,调了年假专程开着咖啡车来摆摊。在他看来,当工作的重压需要一个出口时,咖啡车刚好接住了他。
马致远是“黑泡泡”咖啡车车主,他的主职是街舞老师。去年和家人来云南旅游,逛咖啡节时,各地咖啡车聚集的松弛感让他心生向往。他结识了江山,在江山的带动下,成了一名咖啡车主。周一到周五白天开咖啡车摆摊,晚上7点收摊去舞蹈工作室上课。有时摆摊看见美丽的落日,他便一个人在车旁跳舞。咖啡和舞蹈,他哪一样都舍不得丢。
虽然咖啡车是年轻人追求自由与热爱的移动载体,但它也是充满不确定性的微型创业实践。咖啡车上的生活,并不全是诗和远方。
从新疆来昆明参加嘉年华的彭须顺,因3000多公里的路况十分复杂,车轮多次爆胎,路上走了半个月,其中有10天是在修车。翻越祁连山进入高原时他发生高反,时速只能维持在三四十公里。
气候也会影响经营。今年,嘉年华期间正值雨季,大雨说下就下。好在郎保文提前学做了鸡蛋仔,以弥补雨天绿豆沙销量下滑带来的损失。这种及时作出的务实调整,源于去年10月去曲靖参加咖啡节的经验,当时天气转凉,他没继续卖绿豆沙,改推芝士火鸡面和烤冷面,现场排起长队。这让他意识到“产品必须随季节动态调整”。
在这个行业,一切从零起步,不是咖啡师出身,头一周无法回本,从爱好到稳定出品之间需要漫长的学习过程,这些门槛让不少人坚持不到一个月就放弃,能继续经营的,要学会在梦想和生计之间找到平衡点。王磊磊(化名)就在学习这种平衡。
他是“王教瘦咖啡”车的车主,利用辞职后的过渡期经营咖啡车,参加各地的活动是为了寻找更多的工作机会。参加咖啡节这类大型活动,摊位密集,最初他坚持只卖咖啡,认为“加入别的东西就不专业、会砸招牌”。但现实是,产品单一,限制了咖啡销量。今年他增加了烤肠,烤肠的烟火气带动了咖啡销售。他学会在车旁大声吆喝,提前规划参加全国各地活动的路线。“只要能经营下去,就继续跑,说不定哪次碰上合适的人和项目,就转向了。”他说。
尽管现在所有环节、焦虑都要自己扛,但这种时间自由、能掌控全局、快速响应变化的状态,王磊磊很喜欢。在他看来,人生未必只有“冲刺”和“躺平”两个选项。咖啡车像一个缓冲地带,让人在朝九晚五之外,找到一种既能安顿身心又能持续探索的路。
因咖啡节而生的连接
今年,彼得兄弟咖啡主理人江都再次来到嘉年华。去年第一次参加时,品牌正面临生存危机,但嘉年华上收获的顾客反馈和同行鼓励,让他重新拾起信心。之后他们辗转西安、重庆、青岛等10多个城市,打磨出6款全新特调咖啡。“这次来,有老顾客从展区另一头走过来,专门尝我们的新品。”走过许多城市,江都觉得回到昆明总有一种“回家”的感觉,“这里的氛围松弛而真诚,是全国独一份的。”
每次来昆明,江都会跑一趟云南的咖啡产区。去年去了保山和普洱,今年前往临沧等地,他想在不同的微气候和品种之间,找到云南豆更多的风味。
这种对云南咖啡豆的深层认同,是许多咖啡车主共有的默契。
连续3年参加嘉年华,江山与当地烘焙师交流,再把豆子带回长沙反复测试,“建立起对云南产区风味谱系的理解”。如今他的菜单里,云南豆已是主力基底。
从新疆辗转而来的彭须顺,对云南多元文化的包容感触颇深。他一直用云南豆,“作为咖啡从业者,既然来到云南,就有责任推广这里的豆子。”
更让咖啡车主们看重的是,嘉年华把全国52个城市的200多辆咖啡车聚在一起,创造了单打独斗难以企及的机会。今年9天吸引客流646万人次,直接消费总收入5525万余元。范德张9天营业额超过2万元;郎保文的绿豆沙和鸡蛋仔在第一天下午5时就售罄,补货等了一个多小时。
咖啡车获得的不仅是收入,还有市场验证和品牌曝光。幸也精品咖啡便是例证。2024年昆明首次举办滇池国际咖啡文化嘉年华时,幸也的绿色咖啡车是100辆参加活动的咖啡车之一,日均近万元的营业额让创始人看到消费潜力;2025年再次参展时,幸也40平方米的临时门店排起长队,咖啡师累到贴出告示休整30分钟再接单。今年,幸也正式入驻滇池东岸的“滇萃·咖啡综合体”。
“嘉年华把个人化的、零散的创业行为,嵌入了城市文旅产业升级和青年创业扶持中。”昆明文旅集团的相关负责人说,“他们在这里找到的不仅是生意,更是成长路径、校准标准、交换认知、社会认同和未来的可能性。”

A mobile car also needs to be professional

Jiangshan drove 1300 kilometers from Changsha to the conference for three consecutive years, and this year brought 10 coffee carts along.

In his opinion, the reason why coffee trucks with a relaxed atmosphere and suitable for the lifestyle of young people can become a commercial form is not only because they are convenient and lightweight, but also because car owners integrate passion, creativity, and professionalism into their operations.

His coffee cart is called 'Not Doing Business', but it happens to be his most serious side job. As someone who runs a cultural company, he combined his wife's love for camping and his own obsession with coffee, and personally turned his family car into a mobile coffee shop. From the first car to the fifth one now, each car has been built from scratch, pouring emotions into it like raising a child. All visual designs revolve around the photography and communication needs of young people. Last year's record of selling up to 8500 yuan in a single day at the carnival has made him even more determined to follow the "standardization" route this year: all products are labeled with dates and expiration dates, business licenses and health certificates are displayed on bulletin boards, employees wear masks and hats with logos, ingredients are classified and sealed according to raw and cooked, ready to eat, and non ready to eat, and even the back of the stall is elevated to prevent water pollution. Mobile vehicles should also be operated in a standardized manner, "said Lang Baowen.

Van der Zhang's' Passion Coffee 'car is a mobile coffee school. Several young people sat around carefully injecting water and observing the extraction process, which was a 1.5-hour hands-on teaching experience they had exchanged for 99 yuan. Fan Dezhang's hometown, Baoshan City in Yunnan Province, is the birthplace of China's coffee industrialization. The coffee planting area is 150000 mu, with an annual output of 24000 tons. The coffee quality rate is over 70%, and the deep processing rate is over 85%, both ranking first in Yunnan Province. Van der Zhang's more than 10 varieties of coffee all use Baoshan coffee beans. He uses coffee trucks as carriers to promote products at exhibitions, coffee festivals, and other events. The most eye-catching design of him, who holds a senior barista qualification certificate, is the "99 yuan handmade brewing teaching experience". "Allowing customers to make a cup of coffee by themselves is far more memorable than simply selling a cup." He said that this course has won him many customers.

The investment and creativity of coffee car owners have transformed coffee cars from a single vehicle into distinctive commercial forms and brand personalities, and also upgraded them from 'roadside stalls' to a micro commercial entity recognized by the market and consumers, "said Jiangshan.

Life on the AB side of a coffee cart

But behind every recognized coffee truck, there is a not so easy account. This account contains emotions, time, body, products, and sometimes even the tug of war between ideals and reality.

Lu Yixin (pseudonym) is participating in the carnival for the second time. This doctor, who works in the laboratory department of a hospital in Hunan, has taken his annual leave and specially drove a coffee cart to set up a stall. In his opinion, when the heavy pressure of work required an exit, the coffee cart happened to catch him.

Ma Zhiyuan is the owner of the "Black Bubble" coffee truck, and his main job is a street dance teacher. Last year, when he traveled to Yunnan with his family and went to the coffee festival, the relaxed feeling of coffee trucks gathering in various places made him yearn for it. He met Jiangshan and became a coffee shop owner under his influence. I open a coffee shop during the day from Monday to Friday and close at 7 pm to attend classes at the dance studio. Sometimes when he sets up a stall and sees a beautiful sunset, he dances alone by the car. He couldn't bear to throw away either coffee or dance.

Although coffee carts are a mobile vehicle for young people to pursue freedom and love, they are also a micro entrepreneurial practice full of uncertainty. Life on a coffee cart is not all poetry and distant places.

Peng Xushun, who came from Xinjiang to Kunming to participate in the carnival, had multiple tire blowouts due to the complex road conditions of over 3000 kilometers. He spent half a month on the road, including 10 days repairing cars. When crossing the Qilian Mountains and entering the plateau, he experienced altitude sickness and could only maintain a speed of 30-40 kilometers per hour.

Climate can also affect business operations. This year, during the carnival period, it was the rainy season, and heavy rain fell as soon as possible. Fortunately, Lang Baowen learned to make egg waffles in advance to compensate for the loss caused by the decline in sales of mung bean paste on rainy days. This timely and pragmatic adjustment stems from the experience of attending a coffee festival in Qujing last October. At that time, the weather turned cooler and he stopped selling mung bean paste and instead promoted cheese turkey noodles and grilled cold noodles, causing a long queue at the scene. This made him realize that 'products must dynamically adjust with the seasons'.

In this industry, everything starts from scratch. If you don't have a background as a barista, you won't be able to recoup your investment in the first week. It takes a long learning process from hobbies to stable production, and these barriers make many people give up in less than a month. Those who can continue to operate must learn to find a balance between their dreams and livelihood. Wang Leilei (pseudonym) is learning this balance.

He is the owner of the "Wang Jiao Skinny Coffee" car and used the transitional period after resigning to operate the coffee car. He participated in various activities to find more job opportunities. Participating in large-scale events such as coffee festivals with dense stalls, he initially insisted on only selling coffee, believing that "adding other things would be unprofessional and would ruin the brand". But the reality is that the single product limits coffee sales. This year, he added grilled sausages, and the fireworks from grilled sausages have driven coffee sales. He learned to shout loudly by the car and plan ahead for routes to participate in activities across the country. As long as we can continue to operate, we should keep running. Maybe we'll turn to the right people and projects someday, "he said.

Although I have to handle all the processes and anxieties on my own now, Wang Leilei really likes this state of free time, being able to control the whole situation, and responding quickly to changes. In his view, life does not necessarily have only two options: "sprint" and "lie flat". The coffee truck is like a buffer zone, allowing people to find a way to both settle down and continue exploring beyond the nine to five routine.

Connection born from the Coffee Festival

This year, Peter Brothers' coffee manager Jiang Du came to the carnival again. When he first participated last year, the brand was facing a survival crisis, but the customer feedback and peer encouragement he received at the carnival helped him regain confidence. Afterwards, they traveled to more than 10 cities including Xi'an, Chongqing, Qingdao, etc., and polished 6 brand new specialty coffees. This time, some old customers walked over from the other end of the exhibition area, specifically to taste our new products. "Having traveled through many cities, Jiang felt that returning to Kunming always gave him a feeling of" going home "." The atmosphere here is relaxed and sincere, unique in the country

Every time I come to Kunming, Jiang will visit the coffee producing areas in Yunnan. Last year he went to Baoshan and Pu'er, and this year he went to Lincang and other places, hoping to find more flavors of Yunnan beans among different microclimates and varieties.

This deep identification with Yunnan coffee beans is a tacit understanding shared by many coffee car owners.

For three consecutive years, Jiangshan participated in the carnival, exchanged ideas with local bakers, and then brought the beans back to Changsha for repeated testing, "establishing an understanding of the flavor spectrum of Yunnan's production areas". Nowadays, Yunnan beans have become the main base in his menu.

What makes coffee car owners value more is that Carnival brings together more than 200 coffee cars from 52 cities across the country, creating opportunities that are difficult to reach alone. This year, it attracted 6.46 million passenger flows in 9 days, with a total direct consumption income of over 55.25 million yuan. Van der Zhang's turnover exceeded 20000 yuan in 9 days; Lang Baowen's green bean paste and egg waffles were sold out at 5 pm on the first day, and restocking took over an hour.

Coffee trucks not only generate revenue, but also gain market validation and brand exposure. Xingye Boutique Coffee is an example. When Kunming first held the Dianchi International Coffee Culture Carnival in 2024, Xingye's green coffee truck was one of the 100 coffee trucks participating in the event, with an average daily turnover of nearly 10000 yuan, which showed the founder the potential for consumption; When participating in the exhibition again in 2025, a 40 square meter temporary store of Xingye formed a long queue, and the baristas were so tired that they posted notices and rested for 30 minutes before accepting orders.
