南京市第二医院神经内科主任医师王蔚在接受媒体采访时介绍,我们脑内有一种叫做“腺苷”的物质,它与“腺苷受体”结合后,会抑制神经活动,让人产生困意和疲惫感。而咖啡因的分子结构与腺苷非常相似,它进入大脑后会“抢”在腺苷前面,与腺苷受体相结合。“咖啡因跟腺苷受体结合后,神经抑制就被解除了,人自然就兴奋起来,困意也就消失了。”王蔚说。
如果咖啡因长期占据受体,大脑就会反射性地增加受体的数量,简单来说,原本50个受体变成了100个,身体对咖啡因产生了耐受。“你需要喝更多的咖啡才能达到原来的提神效果,这就是为什么有些人越喝越多。”
一旦身体适应了这种高水平的受体数量,突然停止摄入咖啡因,咖啡因不再与受体结合,人体自身产生的腺苷就会“蜂拥而上”,与多达100个受体结合,导致神经被过度抑制。“过度抑制的结果就是脑血管扩张,从而引发头痛、乏力、情绪变差等戒断反应。”
那么如何避免或减轻这种戒断性头痛呢?王蔚指出,首先不要突然完全停止喝咖啡。她建议长期饮用者可以每天逐渐减少饮用量,比如从两杯减到一杯半,再减到一杯。其次,不要养成长期大量饮用咖啡的习惯,推荐间断、小量饮用,以保持受体数量的相对平衡。“受体没那么多了,一旦不喝,戒断反应自然就不会那么明显。”
